1 | Egg | |
1 1/4 | c | Milk |
1 | tb | Melted butter or margarine |
1 | c | Buttermilk pancake mix |
1/3 | c | Finely shredded cabbage |
FILLING | ||
1 | c | Cooked ham; finely slivered |
1 | c | Sour cream |
Combine egg, milk, melted butter and pancake mix. Beat until smooth. Stir in cabbage. Heat a skillet or griddle, pour in a little melted butter to form a thin film on the bottom. Drop 2 to 3 tablespoons of batter onto the hot griddle for each pancake. When bubbles form on top, turn and cook an additional 1 to 2 minutes or until golden on bottom. Keep warm in slow oven until all pancakes are made. Makes approximately 8 pancakes.
FILLING: Combine ham and sour cream. Spread on hot pancakes, folding over once. Serves 4, 2 pancakes per person.
