Title: Red Onion Relish

Yield: 3 Cups
1/4 | c | Olive oil |
2 | lb | Large red onions; sliced and separated into rings |
1/4 | c | Red-wine vinegar |
2 | tb | Sugar |
1/2 | ts | Salt |
1/4 | ts | Ground white pepper |
In large skillet, heat oil over medium heat. Add onions and saute 6 minutes. Reduce heat to low, cover, and cook onions 15 minutes or until tender, stirring occasionally.
Stir vinegar, sugar, salt, and pepper into onions. Cook 5 minutes longer or until mixed. Transfer to a serving dish and serve warm or at room temperature.
