Title: Neptune's Delight with Hot Mustard Sauce

1 | lb | Freshwater fish fillets |
1/3 | c | Water |
3/4 | ts | Salt |
1/4 | c | Cornmeal |
1 | Egg | |
3 | ts | Sesame seeds |
1/3 | c | Flour |
1/2 | ts | Cayenne pepper |
HOT MUSTARD SAUCE | ||
1 | c | Mayonnaise |
1/2 | c | Prepared mustard |
1/2 | ts | Sugar |
1/4 | ts | Paprika |
1/2 | To 1 ts cayenne pepper |
Heat oil in a skillet to about 350øF to 375øF. Mix water, salt, cornmeal, egg, sesame seeds and flour. Dip the fish fillets into the mixture, and drop several pieces of the fish into the oil. Allow the fish to brown, turning once and then draining on paper towels. Serve with Hot Mustard Sauce.
Hot Mustard Sauce: Mix the ingredients together in a small bowl with a fork until well blended. This recipe makes enough sauce for dipping approximately 3 lb of fried fish fillets.
