Title: Fruit Cocktail Cake with Icing

CAKE | ||
2 | c | Unbleached flour |
1 1/2 | c | Sugar |
2 | c | Fruit cocktail |
1 | ts | Baking soda |
2 | lg | Eggs |
pn | Salt | |
ICING | ||
1 1/2 | c | Sugar |
1 1/2 | Sticks margarine | |
1/2 | c | Chopped pecans |
1/2 | c | Coconut |
1 | c | Undiluted evaporated milk |
Mix all ingredients by hand. Pour into a 9"x13" baking pan. Bake at 350øF for about 40 minutes.
Icing: Cook sugar, margarine and milk until thick. Remove from heat and add pecans and coconut. Pour over hot cake.
