Title: Chocolate Creme Brulee

1 | qt | Cream, heavy |
1/2 | c | Sugar, brown |
2 | tb | Sugar |
8 | oz | Milk chocolate; chopped |
7 | Egg yolks | |
1 | ts | Extract, vanilla |

1/2 | c | Sugar, brown |
SWEETENED WHIPPED CREAM | ||
1 | c | Cream, heavy |
1/2 | c | Sugar |
1 1/2 | ts | Extract, vanilla |
In heavy saucepan over medium-high heat, bring cream and sugars to boil. Add chocolate and remove from heat; stir until chocolate is melted. Allow to cool slightly.
Preheat oven to 350 F. In medium mixing bowl, whisk egg yolks and vanilla until blended. Whisk 1/4 cup chocolate mixture into eggs. Pour in remaining chocolate mixture and whisk until blended. Pour mixture through strainer into 13"x9"x2" glass baking pan. Place pan in larger baking pan. Add water to larger pan to come halfway up side of inner pan. Bake 1 to 1-1/2 hours, until knife inserted in center comes out clean. Cool to room temperature. cover with plastic wrap and refrigerate 6-8 hours.
Set oven to broil. Pat top of dessert with paper towel to remove excess moisture. cover top evenly with brown sugar. Place dessert under broiler just until sugar begins to melt, about 5 minutes. (Watch dessert carefully, sugar will melt very quickly.) Serve warm or chilled with sweetened whipped cream.
Sweetened Whipped Cream: Beat all ingredients in large mixing bowl at high speed until soft peaks form.
