Title: Orange-Basil Salmon

Yield: 6 Servings
1/4 | c | Fresh orange juice |
2 | tb | Fresh lemon juice |
2 | tb | Olive oil |
1/3 | c | Fresh basil; chopped |
2 | ts | Grated orange rind |
6 | 1-inch-thick salmon steaks |
Combine first 5 ingredients in a large shallow dish or zip-top plastic bag; add salmon. Cover or seal, and chill 2 hours.
Remove salmon from marinade, discarding marinade. Grill, covered with grill lid, on a lightly greased food rack over medium-high heat (350 F to 400 F degrees) 10 minutes on each side or until fish flakes easily with a fork. Yield: 6 servings. Southern Living Magazine July, 1997
