Title: Rhubarb Relish

Yield: 4 Pints
12 | c | Finely chopped fresh or frozen rhubarb |
1 | md | Onion, chopped |
2 | c | Sugar |
1 | c | Cider vinegar |
1 | ts | Salt |
1 | ts | Ground cloves |
1 | ts | Ground allspice |
1/4 | ts | Paprika |
1 | ts | Ground cinnamon |
In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat and simmer for about 2 hours or until mixture thickens, stirring occasionally. Pour into jars. Refrigerate or freeze in covered containers.
This relish complements any meant, but it a "must" for meatloaf!
