Title: Casbah Couscous Pudding

4 | Egg yolks | |
2 | ts | Vanilla extract |
3 | tb | Sugar; or honey |
1 | Orange rind; grated | |
1/2 | ts | Salt |
1 | qt | Milk |
1/3 | c | Couscous |
Cinnamon; for garnish |
Combine egg yolks, vanilla, sugar, orange rind and salt in a small bowl. In a medium saucepan combine milk and couscous and heat just to boiling.
Remove from burner. Add egg mixture and return to burner. Heat to a boil while stirring until thick and creamy. Let stand 5 minutes. Pour into dessert bowls. Sprinkle with cinnamon and cool.
