Title: Mom's Mac Nut Waffles

Yield: 1 Servings
2 | lg | Island eggs; separated |
1 1/4 | c | Half and half; or milk |
1 | ts | Almond extract |
2 | c | Cake flour; sifted |
1/4 | c | Sugar |
3 | ts | Baking powder |
1/4 | ts | Salt |
6 | tb | Butter; melted* |
1/2 | c | Macadamia nuts; chopped plus |
Macadamia nuts; for garnish | ||
Powdered sugar; for garnish | ||
Maple syrup; pure, or coconut | ||
Fresh strawberries; or mangos |
* Please, NO margarine!!! Beat egg yolks until light. Add milk and almond extract. Continue beating. Sift the dry ingredients together and add to the egg yolk mixture. Add melted butter and continue to beat. Lastly, very gently fold in stiffly beaten egg whites. Bake in well heated waffle iron. Garnish with additional mac nuts and powdered sugar. Serve with pure maple syrup, coconut syrup or fresh fruit, such as sliced and sugared strawberries or mangos.
