Title: Millet Pudding

1 | c | Uncooked millet |
2 | c | Boiling water |
1 | c | Freshly squeezed orange juice |
1 | tb | Grated orange peel |
1/4 | c | Shredded unsweetened coconut |

1/4 | c | Honey |
1 | tb | Vanilla |
1/2 | c | Raisins or currants or |
Chopped dried apricots |
Preheat oven to 350 degrees. Combine millet and water in large bowl. Let stand, covered, 10 minutes to soften grain slightly. Add orange juice, orange peel, coconut, honey, vanilla and raisins.
Pour mixture into lightly oiled 2-quart casserole dish. Bake for 45 minutes to 1 hour, or until all liquid is absorbed.
