3 | Cloves garlic; minced fine | |
1 | md | Tomato; chopped,seeded, |

1/4 | c | Veg oil; salt and pepper to t |
Vinegar to taste white | ||
Black olives or green olives |
Wash then bake the eggplant at 375 until it is soft and tender. With the skin on. Turn during baking, and it should take about 20 mins. Peel off the skin. Add all the ingreds. except the olives to a processor, or chopping bowl and chop fine. Season to taste, and on salad greens with olives as garnish. Enjoy! Cookin'up A Storm Always, Cheryl CG
