1/2 | sm | Yellow onion |
1/2 | c | Mayonnaise |
3 | tb | Freshly grated parmigiano-reggiano |
2 | tb | Finely chopped fresh parsley |
Salt and freshly ground pepper, to taste | ||
8 | sl | White bread |
Preheat oven to 350 degrees.
Peel and finely chop small yellow onion and mix with mayonnaise, freshly grated Parmigiano-Reggiano, and finely chopped fresh parsley in a medium bowl. Season with salt and freshly ground pepper.
Remove crusts from 8 slices of white bread. Using a 1-inch round cookie cutter, cut bread into 32 rounds. Place on a cookie sheet and bake, without turning, until golden, 10-15 minutes.
Preheat broiler. Spread about 1 teaspoon onion mixture onto each round, then sprinkle with more Parmigiano-Reggiano and brown under broiler for 1 to 2 minutes. Serve immediately.
