12 | oz | Rotini |
6 | oz | Green beans, cut into pieces |
1 1/3 | c | Chopped tomatoes |
3/4 | c | Diced cucumbers |
3/4 | c | Diced red or green peppers |
1/2 | c | Sliced red onions |
6 1/2 | oz | Can flaked tuna packed in water, drained |
1/3 | c | Sliced olives |
1/2 | c | Chopped fresh dill -OR- |
1 | tb | Dried dill |
5 | Anchovies, minced | |
1/3 | c | Olive oil |
1/4 | c | Lemon juice |
1/4 | c | Balsamic vinegar |
2 | tb | Water |
2 | ts | Crushed garlic |
Cucumber shavings, for garnish |
Cook pasta in boiling water according to package instructions or until firm to the bite. Rinse with cold water. Drain and place in a serving bowl.
Blanch green beans in boilng water approximately 2 minutes. They should still be crisp. Drain, rinse with cold water and add to pasta. Add tomatoes, cucumbers, sweet peppers, onions, tuna, olives, dill and anchovies.
Make the dressing: In a small bowl, combine oil, lemon juice, vinegar, water and garlic. Pour over pasta and toss. Garnish with cucumber shavings.
