Title: Orange-Glazed Carrots C/p

1 | pk | Peeled baby carrots -(32 oz.) |
1/3 | c | Frozen orange juice concentrate -thawed |
3 | tb | Brown sugar |
1/2 | ts | Ground cinnamon |
1/4 | ts | Grated nutmeg |
1 1/2 | tb | Cornstarch |
1 | tb | Butter |
2 | tb | Grand marnier or |
Other orange-flavored liqueur, optional | ||
Salt | ||
Freshly ground pepper |
In a 3-1/2 quart electric slow cooker, mix the carrots, orange juice concentrate, brown sugar, cinnamon, nutmeg, and 2 tablespoons water. Cover and cook on the low heat setting about 7 hours, or until the carrots are almost tender. Increase the heat to the high setting. Dissolve the cornstarch in 2 tablespoons cold water and stir into the carrots. Cook, covered, 30 minutes longer, or until slightly thickened.
