Title: 7-Minute Frosting

3 | Egg whites | |
1 1/4 | c | Sugar |
5 | tb | Cold water |
1 | ts | Vanilla |
Bring water to simmering in the bottom of a double boiler.
In the top of a double boiler, combine egg whites (at room temperature), sugar and water.
Place on double boiler and begin mixing with an electric mixer for approximately 7 minutes. Do not allow it to cook too much or the icing will be very hard.
Add vanilla at the end and stir.
Let cool slightly and ice the cakes.
