Title: Honey-Lemon Mini Muffies L/f

1 | lg | Egg |
3/4 | c | Non-fat milk |
2 | tb | Vegetable oil |
6 | tb | Unsweetened applesauce |
1/3 | c | Honey |
1 | c | Whole wheat flour |
1 | c | All-purpose flour |
3 | ts | Baking powder |
1 | ts | Salt |
1 | tb | Lemon peel; grated |
1/4 | c | Lemon marmalade |
Heat oven to 400 degrees. Spray 24 mini-muffin pans with Pam.
Beat egg; stir in milk, oil, applesauce and honey. Mix flour, lemon peel, baking powder and salt. Stir into milk mixture all at once just until flour is moistened (batter will be lumpy. ) Fill muffin cups about 3/4 full. Spoon 1/2 teaspoon of marmalade onto batter in each cup.
Bake about 15-20 mins. or until golden brown. Immediately remove from pan.
Makes about 24 mini-muffins. K=66 Fat=1. 5 gms.
