1/4 | c | Canola oil |

1 | tb | Rapid-rise yeast |
3 1/3 | Flour (to 3 5/8 cups); divid | |

Egg wash: | ||
1 | Egg white | |
1 | tb | Water |

Recipe by: Kim Clegg Place raisins in medium bowl & pour boiling water over. Let plump 2 minutes. Drain, blot dry & allow to cool. BREAD MACHINE METHOD: Place cool water, salt, sugar, egg whites, honey, oil, saffron or food coloring, yeast & all but 1/2 c flour in the machine's pan, or in order given by manufacturer. Proceed with remaining bread machine instructions for SPECIAL NEW YEAR'S CHALLAH. CONVENTIONAL METHOD: In large bowl mix warm water, salt, sugar, honey & sprinkle with yeast. Beat in egg whites, canola oil & food coloring or saffron. Beat in 3 c flour. Proceed with remaining conventional instructions for SPECIAL NEW YEAR'S CHALLAH. Makes 16 slices. CAL 181; fat 4 g (19% of calories); protein 4 g; carbohydrate 33 g; cholesterol 8 mg; Sodium 165 mg Diabetic exchanges: 1 1/2 bread, 1/2 fruit, 3/4 fat. May not be recommended for diabetics.
