Title: Mom's Pickled Beets

Yield: 6 Servings
3/4 | c | Sugar |
3/4 | c | Vinegar |
3/4 | c | Water |
1 1/2 | ts | Salt |
3/4 | ts | Pepper |
1 | lg | Onion; thinly sliced |
2 | cn | (13 1/4 oz.) sliced beets; undrained |
Sliced green onions; optional |
In a saucepan, combine the first six ingredients; bring to a boil. Reduce heat; cover and simmer for 5 minutes. Remove from the heat; add beets. Let stand at room temperature for about 1 hour. Cover and chill 6 hours or overnight. Garnish with green onions if desired. Yield 6 servings.
