Title: Bob Hope's Lemon Pie

1 | c | Sugar |
2 | tb | Sugar |
3 | tb | Cornstarch |
1 | c | Boiling water |
2 | tb | Butter |
1 | pn | Salt |
4 | tb | Lemon juice |
4 | Egg yolks | |
Grated rind of 1 lemon | ||
3 | Egg whites | |
Baked pie shell | ||
2 | tb | Sugar |
Combine cornstarch and sugar, add water slowly, stirring constantly, until thick and smooth. Add slightly beaten egg yolks, butter, lemon rind and juice and salt. Cook 2-3 minutes. Pour into baked shell. Cover with meringue made from 3 egg whites, beaten stiff and 2 tbsp sugar. Bake in slow oven 15 minutes until brown.
