Title: Black Bean Burgers

Yield: 8 Servings
3 | cn | Black beans; rinsed and drained |
2/3 | c | Onion; finely chopped |
1/4 | c | Red bell pepper; finely chopped |
1 | tb | Jalapeno pepper; finely chopped |
1 | ts | Ground cumin |
3 | tb | Sesame seeds; roasted |
1 | tb | Lime juice |
1 | ts | Salt |
1/2 | ts | Peppr |
2 | tb | Vegetable oil |
In large bowl, mash beans until most are smooth, leaving some intact. Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice, salt and pepper; mix well. Divide mixture into 8 equal patties about 3-1/2 inches in diameter. In large heavy frypan, heat oil over medium-low heat. Cook patties, in batches, for 8-10 minutes or until lightly browned, tuning once and adding more oil if necessary. Carefully remove burgers from frypan to platter and tent with foil. Let stand 5 minutes before serving.
Makes 8 burgers.
