Title: Breakfast Burritos

Yield: 4 Servings
1/4 | c | Onion; finely chopped |
1/2 | c | Canadian bacon; diced |
3 | tb | Green chiles; chopped |
1 1/4 | c | Better 'n eggs |
4 | Fat free tortillias; large, warmed | |
1/3 | c | Sargento lowfat mexican cheese blend |
1. Coat large nonstick skillet with nonstick cooking spray, And heat over medium heat. Add onion and cook, stirring constantly, for 2 minutes or until crisp-tender. Add bacon and chilies and stir to mix well. 2. Pour egg substitute over the onion mixture and reduce heat to medium low. Cook without stirring for about 5 minutes until eggs are almost set. Stirring gently to scramble, continue to cook for another minute or 2, or until done to your liking. 3 Arrange warm tortillas an a flat surface. Place 1/4 of egg mixture on tortilla and top with 1/4 of cheese. Fold 4. Top with picante sauce and nonfat sour cream if desired.
