Title: Chocolate Sandwich Cookies

For cookie: | ||
3 | c | Flour |
1 1/2 | c | Sugar |
3/4 | c | Cocoa powder |
3/4 | ts | Salt |
3 | ts | Baking powder |
1 1/2 | c | Milk |
2 | Eggs | |
1 1/2 | ts | Vanilla |
3/4 | c | Shortening |
For filling: | ||
3/4 | c | Butter; softened |
2 | c | Powdered sugar |
1/8 | ts | Salt |
1 | Jar marshmallow cream; 7 oz. | |
1 1/2 | ts | Vanilla |
1 | tb | Milk |
For Cookie: Blend together dry ingredients and then add all wet ingredients. Blend thoroughly. Drop by rounded teaspoons onto an ungreased cookie sheet. Leave space and only use a teaspoon,they spread. Bake at 400 for 7-8 minutes. Remove immediately and cool. Makes a soft cake like cookie. For Filling:Blend all and beat with mixer till fluffy. Spread filling on one cookie and top with another, sandwich style.
NOTES : Excellent frozen. I have played with this over the years and add 1 t peppermint extract to the filling at the holidays in lieu of the vanilla,and have also used crushed peppermint candy in the filling. I have also coated them in confectioners coating. (Dip in chocolate) I don't remember how many it makes...my granny never had that on the recipe....a bunch, but they won't last!
