Title: Golden Potatoes with Carrots

1 1/2 | lb | Potato; peeled and sliced |
1 1/2 | c | Carrot; sliced |
1 | tb | Vegetable oil |
1 | c | Onion; finely chopped |
3/4 | ts | Dried thyme |
1/2 | ts | Salt |
1/8 | ts | Pepper |
Cook potatoes and carrot boiling water 5 minutes; drain.
Heat oil in a 10-inch cast iron skillet over medium-high heat, swirling to coat bottom of pan. Add potatoes and carrots; saute 5 minutes. Add remaining ingredients; saute 10 minutes or until tender.
