Title: Italian Meatloaf

Yield: 8 Servings
2 | Eggs, beaten | |
3/4 | c | Bread Crumbs, softened |
1/2 | c | Tomato Juice |
2 | tb | Snipped Parsley |
1/2 | ts | Dried Oregano |
1/4 | ts | Salt |
1/4 | ts | Pepper |
1 | sm | Garlic Clove, minced |
2 | lb | Lean Ground Beef |
8 | Thin Slices of Boiled Ham | |
6 | oz | Mozzarella, shredded |
3 | Slices of Mozzarella, cut i half diagonally |
Combine eggs, bread crumbs,juice, parsley, oregano, salt, pepper and garlic. Stir in ground beef, mix well. Pat into a 10"x12"x1" thick rectangle on foil. Put ham slices on top not all the way to the side. Sprinkle shredded mozzarella on top. Roll up carefully using the foil from the short end. Press the edges to seal. Place in a 9x13 baking pan. Bake in a preheated 350oF oven for 1/ hours. Top with cheese triangles and cook 5 minutes longer to melt the cheese.
