Title: Zucchini Bread - Nancy Merril's Blue Ribbon

3 | Eggs | |
2 | c | Sugar |
2 | c | Zucchini; grated |
1 | c | Vegetable oil |
2 | c | Flour |
1/2 | ts | Baking powder |
1/2 | ts | Baking soda |
1 | ts | Salt |
3 | ts | Cinnamon |
1 | c | Nuts; chopped |
3 | ts | Vanilla |
Beat eggs. Add sugar, zucchini, and oil and mix. Sift all dry ingredients together and add to mixture. Add chopped nuts and vanilla.
Bake at 350F oven for 1 hour and 15 minutes. Makes two small loaves.
