Title: Mixed Up Potatoes

Yield: 6 Servings
6 | md | Potatoes; peeled, (up to 8) |
1/4 | c | Butter or margarine |
1 | cn | Cream of chicken soup |
1 | c | Sour cream |
1/3 | c | Onions; chopped |
2 | c | Cheddar cheese; grated |
Boil the potatoes for 15 minutes. Drain and let cool slightly before grating into a bowl. While the potatoes are boiling, melt the butter in a 9x13 inch baking dish. Add the soup, sour cream, onion and 1 cup of grated cheese to the potatoes. Mix well then turn into the baking dish. Stir to mix the butter. Cover with the remaining cheese and bake 20-30 minutes at 350 degrees.
NOTES : Can be made into a main dish by adding 1 1/2 - 2 cups of cooked
chicken. 1 pkg. cooked chopped broccoli and 1 extra can cream of chicken
soup. I do not grate potatoes when making main dish, but just slice them.
(Also if desired, before baking, mix 2 cups of crushed corn flakes and 2
tablespoons melted margarine and sprinkle over potatoes.) Posted to
