Title: Simple - Honest Potato Pudding

Yield: 1 Servings
2 | c | Grated raw potatoes |
1 | c | Thinly sliced onions |
1 | c | Grated carrots |
1/2 | ts | Salt |
1/4 | ts | Pepper |
1/4 | ts | Savory or marjoram |
2 | tb | Cream |
2 | tb | Butter |
Mix together the potatoes, onions, carrots, salt and pepper. Mix and add the cream. Place in a generously buttered pudding dish. Dot with the butter. Cover and bake in a preheated 350 degree F oven for 45 minutes. Uncover and bake another 15 minutes or until a thin golden crust has formed.
NOTES : During a summer I spent in Summerside, our hostess was named Dolly.
She was vivacious, always neat as a pin, and a good cook to top it. She
