1 | lb | Ground beef |
1/4 | c | Dry bread or cracker crumbs |
1 | ts | Instant minced onion -OR- |
2 | tb | Finely chopped onion |
1/2 | ts | Salt |
1/8 | ts | Pepper |
1 | tb | Oil or shortening |
1/4 | c | Sugar |
2 | tb | Cornstarch |
2 | tb | Soy sauce |
2 | tb | Vinegar |
1/2 | c | Water |
1/2 | c | Reserved pineapple syrup |
2 | | Green peppers, cut into 1" pieces |
13 1/4 | oz | Can pineapple tidbits or chunks, drained, reserving syrup |
In a large mixing bowl, combine ground beef, bread crumbs, onion, salt and
pepper. Mix well. Shape into 1" balls. Brown in hot oil in a fry pan. Drain
off drippings. Remove meatballs. Combine sugar and cornstarch in fry pan.
Stir in soy sauce, vinegar, water and pineapple syrup. Cook, stirring
constantly, until mixture thickens and boils. Add green pepper, pineapple
and meatballs. Cover and simmer 15 to 20 minutes. Serve over rice.
