Title: Sweet Potato Patties

Yield: 4 Servings

1 1/2lbSweet potatoes, cut into pieces and boiled
2tbVirgin or extra-virgin olive oil
1/2tsSalt
1dsPepper and nutmeg
1/4cHot skimmed milk
1/2cPecans, chopped
1/2cPecans, ground
  Butter

Drain sweet potatoes and mash with a fork, ricer or electric mixer. Add oil, salt, pepper, nutmeg, and milk, beating until light and fluffy. Stir in chopped pecans and shape into 8 flat round patties. Dip both sides into ground pecans to coat. Place on a lightly oiled baking sheet and dot with butter. Bake in a preheated 450F. oven for 20 minutes. Serve with a mushroom gravy.
