9 | c | Flour |
2 | pk | Yeast |
3 1/4 | ts | Salt |
2 2/3 | c | Water, warm |
2 | tb | Malt extract, dried |
1 | ts | Sugar |
Disolve salt, yeast, malt in the warm water. Add flour. Knead for 10 minutes. Let rise until doubled (1 1/2 hours) Divide into portions and form into bagels. Immerse in six quarts of boiling water to which the 1 teaspoon of sugar has been added. Bagels should sink to bottom of pot. Remove from water when they rise to the surface. Not more than one minute in boiling water. Place boiled bagels on lightly greased cookie sheets. Bake at 400F for 10 minutes. Reduce heat to 375F and bake for 10 minutes more. Reduce heat again to 350F and bake for 10 minutes more.
