Title: Joshua's Cream of Broccoli Soup

Yield: 6 Servings
1 | lb | Broccoli, cut into sm pieces |
2 | c | Water |
1/4 | c | Butter or margarine |
1 | c | Onion, chopped |
1 | Garlic clove, minced | |
2 | tb | Flour |
2 | Chicken bouillon cubes | |
2 | c | Light cream |
Salt & pepper |
Cook broccoli in water until tender. Puree broccoli in blender or food processor, mix into cooking water. Melt butter, saute onion until transparent. Add garlic and flour. Stir until paste forms. Add vegetable puree, stir well. Add bouillon cubes and simmer 10 minutes. Just before serving, add light cream, salt & pepper. Heat but do not boil.
