Title: Apricot Glazed Pork Chops

4 | | Pork rib or loin chops, 1/2" thick |
1 | ts | Salt |
1 | tb | Oil or shortening |
16 | oz | Can apricot halves, drained, reserving liquid |
| | Reserved apricot liquid plus water to make 1 1/2 cups |
2 | tb | Cornstarch |
2 | ts | Lemon juice |
2 | tb | Slivered almonds |
Sprinkle chops with salt. Brown in oil on both sides in frying pan. Add 1/2
c of the apricot liquid. Cover, reduce heat and simmer for 10 minutes.
Combine cornstarch and remaining 1 c apricot liquid. Add to chops. Continue
simmering, stirring frequently, until liquid thickens. Add apricots and
almonds. Cover and continue simmering for
10 minutes.
