Title: Emilie's Pork Medalions Chinese Style

Yield: 4 Servings

6 Pork medallions trimmed of
  All fat
1tsDry mustard
1tbSugar
2tbHoney or applesauce
2tbOil
3/4cSoy sauce
1/4cDry sherry, or madera
1tbGrated fresh gingeroot
1lgClove garlic crushed

Blend all ingredients but pork and bring to slow boil . Let simmer to blend flavors for about 1/2 hour stirring to prevent sticking. Saute pork medallions in 1 t oil or in pan coated with pan spray.
