Title: Phyllis' Avocado Bread

Yield: 1 Loaf
1 | sm | Avocado |
1 | Egg; slightly beaten | |
1/2 | c | Sour milk |
1 | c | Unbleached white flour |
1 | c | Whole-wheat flour |
1/2 | ts | Baking soda |
1/2 | ts | Baking powder |
Dash of salt | ||
3/4 | c | Sugar (scant) |
1 | c | Pecans; chopped-ONLY pecans |
Mix all ingredients except first 3 in large bowl. Mash avocado; add egg and sour milk. If flour mixture is very dry, add another egg. Combine avocado mixture with flour mixture; stir only to moisten all flour. Pour into loaf pan or 4 mini loaf pans. Bake loaf at 350F for 1 hour. Mini loaves require 375F for 25-30 minutes.
