Title: Title: Rhubarb Bars

FILLING | ||
3 | c | Rhubarb; chopped |
1 1/2 | c | Sugar |
2 | tb | Cornstarch |
1/4 | c | Water |
1 | ts | Vanilla |
CRUST | ||
1 1/2 | c | Rolled oats |
1 1/2 | c | Flour |
1 | c | Brown sugar |
1 | ts | Baking soda |
1/2 | c | Butter; softened |
1/2 | c | Shortening |
1/2 | c | Walnuts; chopped |
Mix filling ingredients in a saucepan and cook 'til thick. Set aside. Mix the crust ingredients together until crumbly. Divide crust crumbs into thirds and press 2/3rds of crust mixture into a 9x13 pan. Pour rhubarb mixture on top. Sprinkle with remaining 1/3 of crumb mixture. Bake at 350 degrees (F) for 30 - 35 minutes. Yummy!
