1/4 | c | Butter or margarine |
1 | lb | Idaho Potatoes, peeled, grated and squeezed dry |
1 | lg | Onion, diced |
1 | md | Red or green bell pepper, seeded and diced |
1/2 | ts | Salt |
1/8 | ts | Freshly ground black pepper |
In a 1 2-inch skillet over medium-high heat, melt the butter. Add Idaho Potatoes, onion, and bell pepper and cook about 8 to 10 minutes, gently stirring the mixture every few minutes. Add the salt and pepper: cook until the potatoes are well browned on both sides and tender. (Makes 4 servings)
