Yield: 10 Skewers
1 | lb | Chicken breasts, lean pork, beef, or ham sliced thin |
3 | Cloves of minced garlic | |
1/2 | Onion, minced | |
2 | ts | Minced cilantro |
1 | tb | Brown sugar |
The juice of 1 lime | ||
1 | tb | Nampla ("fish sauce") |
1 | tb | Vegetable oil |
Thread the meet onto 12-inch bamboo skewers, placing several strips on each of the 16 skewers. Combine the garlic, onion, cilantro, brown sugar, lime juice, nampla, and vegetable oil in a bowl. Pour over the skewers and marinate for 1 hour. Heat barbecue coals until hot, or preheat a broiler. Place the skewers on the grill or broiler rack and cook until done as desired. Serve the satays with peanut butter sauce.
Makes 10-12 skewers.
