Title: Chicken Apple Saute

Yield: 4 Servings

2tbVegetable oil
1lbChicken, skinned, boned and cut into strips
1mdGreen pepper, sliced lengthwise
1mdOnion, sliced lengthwise
1cDiagonally sliced celery
1 Golden Delicious apple, cored and sliced
1/2cApple juice
1tbWhite vinegar
2tsSoy sauce
1tbCornstarch

Heat oil in non-stick skillet or wok. Saute chicken until no longer pink; remove from pan. Saute green pepper, onion and celery until tender-crisp. Return chicken to pan; add apple and cook for 1 minute. Combine remaining ingredients; add to apple mixture and cook until sauce thickens.

4 servings. Fat 14 grams per serving / Fiber
