Title: Chicken Apple Saute

Yield: 4 Servings
2 | tb | Vegetable oil |
1 | lb | Chicken, skinned, boned and cut into strips |
1 | md | Green pepper, sliced lengthwise |
1 | md | Onion, sliced lengthwise |
1 | c | Diagonally sliced celery |
1 | Golden Delicious apple, cored and sliced | |
1/2 | c | Apple juice |
1 | tb | White vinegar |
2 | ts | Soy sauce |
1 | tb | Cornstarch |
Heat oil in non-stick skillet or wok. Saute chicken until no longer pink; remove from pan. Saute green pepper, onion and celery until tender-crisp. Return chicken to pan; add apple and cook for 1 minute. Combine remaining ingredients; add to apple mixture and cook until sauce thickens.
4 servings. Fat 14 grams per serving / Fiber
