Title: Cola Oven Barbecue

2 | tb | Butter |
1 | md | Onion, finely chopped |
2 | Garlic cloves, finely chopped | |
1 | Bay leaf, crumbled | |
2 | c | Ketchup |
6 | oz | Cola |
1 | tb | Worcestershire sauce |
1 | ts | Dry mustard |
2 | ts | Cider vinegar |
Salt | ||
Freshly ground pepper | ||
1 | Chicken (3 lbs), cut up |
1. In a large nonaluminum saucepan, melt butter over low heat. Add onion and garlic, and cook until onion is soft, about 5 minutes. Add bay leaf, cola, ketchup, Worcestershire, mustard, vinegar, and salt and pepper to taste. Simmer saice 1 hour, stirring occaisionally.
2. Preheat oven to 350. Pour 1/2 cup sauce in bottom of a 13x9x2-inch baking dish. Arrange chicken peices skin side up in dish. Spoon 1/2 cup more sauce over chicken. Bake for 30 minutes. Turn chicken, baste, and bake another 30 minutes.
3. Turn oven to broil. SPoon 1/2 remaining sauce over chicken. Broil until crisp, about 4 minutes. Turn chicken over and spoon on remaining sauce; broil until crisp.
