Title: Curried Pork with Sweet Potatos

1 | lb | Pork |
1 | Onion | |
2 | sl | Ginger root |
2 | tb | Sesame oil |
1 | tb | Soy sauce |
1/2 | ts | Salt, optional |
ds | Pepper | |
1 | c | Chicken stock |
2 | tb | Curry powder |
Oil for stir-fry |
Peel sweet potatos and cut into 1/2 inch slices. Cut pork in 1/2 inch cubes. Slice onion thinly. Mince ginger root
Heat oil and deep-fry sweet potatos until golden. Drain on paper towels.
Heat remaining oil. Add ginger root and onion and stir-fry a few times. Add pork and brown lightly on all sides.
Stir in soy sauce, salt and pepper. Then add stock and curry powder and bring to a boil, stirring.
Add deep fried potatos and simmer, covered, until pork is done, about 30-40 minutes.
This one is pretty classic; I've seen it almost exactly the same from many sources, and tasted other peoples' versions that are just like this one that I use, so go for it. Careful if you're not ready for hot and spicy, though.
