Title: Shrimp Gumbo

1 | lb | Okra |
1/4 | c | Canola oil |
1/2 | lg | Onion, chopped |
2 | | Chopped green onions |
1 | tb | Chopped parsley |
1/4 | | Green or red bell pepper chopped |
2 | cl | Garlic, minced |
1/2 | c | Chopped celery |
1/2 | tb | Paprika |
1 | tb | File powder or file |
1 | tb | Worcestershire sauce |
1/2 | tb | Low-sodium soy sauce or Kitchen Bouquet |
1 | cn | 14-16 oz. Hunt's Special Sauce |
2 | lb | Medium shrimp, peeled and deveined |
1/2 | lb | Crabmeat |
| | Salt, pepper and Tabasco to taste |
Cook okra 30 to 40 minutes in canola oil over low heat until it is no
longer stringy, stirring occasionally. Add onions, parsley, bell pepper,
garlic, celery, paprika, and file powder. Cook until onions are soft, about
10 minutes. Add all liquids, cooking until hot and bubbly. Add water to
thin sauce to desired consistency. Just before serving, add shrimp and
crab, and cook at a low boil for 15 to 20 minutes. Serve warm. Serves 8-10.
