Title: New Orleans Stroganoff

6 | Pork Chops, boneless | |
1 | ts | Vegetable oil |
1 | md | Onion |
1 | ts | Cajun Seasoning Mix |
14 | oz | Chicken Stock |
1 1/2 | c | Instant Rice, uncooked |
1 1/2 | c | Broccoli, frozen, chopped |
1/2 | c | Sour Cream |
Heat oil on medium heat in a nonstick skillet. Add chopped onion and cook until soft. Add pork and sprinkle seasoning mix over pork. Stir fry 4 to 5 minutes or until pork is no longer pink.
Raise heat to high. Add stock and rice. Stir to moisten rice. Cover skillet to bring stock to a full boil. When stock boils, reduce heat to medium and simmer for 5 minutes until most of the stock is absorbed.
