Title: Pizza Rice

1/4 | c | Olive oil |
1 | md | Onion; chopped |
4 | Garlic cloves; minced | |
2 | Tomatoes; chopped | |
6 | Mushrooms; sliced | |
2 | tb | Parsley; chopped |
1/2 | ts | Oregano |
1/2 | ts | Basil |
2 | c | Quick Brown Rice |
4 | c | Water |
Salt and pepper to taste | ||
1/2 | c | Parmesan cheese |
1/4 | c | Olives, sliced - (green or black) |
Saute' vegetables and seasonings in olive oil. Stir rice and vegetables into a rectangular casserole dish, and pour water on top. Bake at 400 F. for 45 minutes; remove and sprinkle with cheese and olives; cover and return to oven for an additional 10 minutes.
