Title: Buttery Asparagus Saute

Yield: 6 Servings
1 | lb | Asparagus, trimmed, cut into 1-inch pieces |
1 | md | Red pepper; cut into short thin strips |
1/3 | c | Sliced shallots (about 2 large) OR Chopped onion |
3 | tb | Butter |
1/4 | ts | Salt |
1/8 | ts | Ground nutmeg |
Freshly ground black pepper |
In large skillet over medium heat, cook asparagus, bell pepper and shallots in butter until asparagus is crisp-tender, about 5 minutes, stirring occasionally. Season with salt, nutmeg and pepper. Serve immediately.
