Yield: 30 Squares
1/3 | c | All-purpose flour |
1 | ts | Baking powder |
1 | ts | Salt |
1/2 | ts | Pepper |
1/4 | ts | Nutmeg |
2 | Eggs | |
1 | c | Milk |
1 | tb | Butter, melted |
2 | c | Cheddar cheese, shredded |
2/3 | lb | Spinach, frozen, chopped, thawed (300 g) |
1/4 | c | Sweet red pepper, fine chop |
1 | Green onion, chopped |
In large bowl, stir together flour, baking powder, salt, pepper and nutmeg.
In separate bowl, whisk eggs; whisk in milk and butter. Stir in cheese, spinach, red pepper and onion. Pour over flour mixture; stir just until combined. Pour into greased 11x7-inch baking dish. Bake in 350F 180C oven for about 30 minutes or until set. Let cook for 10 minutes; slice into squares.
For easy family supper, cut them into larger squares and serve with vegetables and a dip, and thick slices of Italian bread.
