Title: Red Rice

Yield: 6 Servings

5 Bacon strips
1mdOnion, diced
2cChopped, seeded, peeled tomatoes
1cUncooked long grain rice
1cTomato juice -OR- water
1cFinely chopped fully cooked ham
1/2tsSalt
1/8tsPepper
1/8tsHot pepper sauce

In a skillet, cook bacon until crisp. Remove bacon to paper towels to drain. Discard all but 2 tb of drippings. Saute onion in drippings until tender. Add bacon and remaining ingredients. Cook, covered, over medium-low heat for 10 minutes. Spoon into a 1 1/2 qt baking dish. Cover and bake at 350øF for 45 minutes or until rice is tender, stirring occasionally.
