5 | | Bacon strips |
1 | md | Onion, diced |
2 | c | Chopped, seeded, peeled tomatoes |
1 | c | Uncooked long grain rice |
1 | c | Tomato juice -OR- water |
1 | c | Finely chopped fully cooked ham |
1/2 | ts | Salt |
1/8 | ts | Pepper |
1/8 | ts | Hot pepper sauce |
In a skillet, cook bacon until crisp. Remove bacon to paper towels to
drain. Discard all but 2 tb of drippings. Saute onion in drippings until
tender. Add bacon and remaining ingredients. Cook, covered, over medium-low
heat for 10 minutes. Spoon into a 1 1/2 qt baking dish. Cover and bake at
350øF for 45 minutes or until rice is tender, stirring occasionally.
