Title: Padre Kino's Favorite Meatloaf

2 | c | Chopped onions |
2 | lb | Extra lean ground beef |
1 | lb | Lean Chorizo removed from |
Casing and chopped | ||
1 | c | Seasoned bread crumbs |
2/3 | c | Shredded Cheddar cheese |
1/2 | c | Beef broth |
2 | Egg's lightly beaten | |
1 | tb | Salt |
2 | ts | Dried thyme |
2 | ts | Paprika |
1 | ts | Pepper |
1 | ts | Ground allspice |
1 | ts | Crushed dried oregano |
Preheat oven to 350 degrees. Saute onions. Mix well with other ingredients. Shape into loaf and bake in a large pan for 1 1/2 hours. If oven runs hot shape a foil tent over meatloaf to keep it from drying out.
Each serv is about 470 calories, 33g fat, 142 mg cholestorol Turkey may be substituted for the beef.
