3 | tb | Olive oil |
1/4 | c | Red bell pepper; diced |
1/4 | c | Green bell pepper; diced |
1/4 | c | Celery; diced |
1/4 | c | Onion; diced |
1/4 | c | Carrots; diced |
1 | tb | Garlic; crushed |
1/4 | c | Mushroom buttons; sliced |
1/2 | c | Corn, canned |
1 | c | Tomatoes, canned; diced |
1/4 | c | Black olives; sliced |
1/2 | ts | Chili powder |
1/8 | ts | Cayenne pepper |
1/4 | ts | Thyme |
1/4 | ts | Oregano |
1/4 | ts | Black pepper |
1/4 | ts | Cumin |
1/8 | c | Jalapeno peppers; chopped |
1/4 | c | Tomato paste |
2 | c | Chicken stock or broth |
2 | tb | Cornstarch |
2 | tb | Water |
1/2 | c | Great northern beans, canned |
1/2 | c | Pinto beans, canned |
1/2 | c | Black beans, canned |
1/2 | c | Kidney beans, canned |
8 | oz | Angel hair pasta |
In a 4-qt. saucepan, heat olive oil and add fresh vegetables. Saute until tender and add corn, tomatoes, and black olives. Add spices and cook a minute or two longer. Add jalapeno peppers, tomato paste, and chicken stock and bring to a boil. Add cornstarch mixed with 2 tbsp. water and cook an additional 5 mins., until thickened. Add beans and simmer until heated through.
Cook pasta in a separate pot. When cooked, drain well and serve 1 oz. of pasta w/1 cup of chili in the same bowl.
