3tbOlive oil
1/4cRed bell pepper; diced
1/4cGreen bell pepper; diced
1/4cCelery; diced
1/4cOnion; diced
1/4cCarrots; diced
1tbGarlic; crushed
1/4cMushroom buttons; sliced
1/2cCorn, canned
1cTomatoes, canned; diced
1/4cBlack olives; sliced
1/2tsChili powder
1/8tsCayenne pepper
1/4tsThyme
1/4tsOregano
1/4tsBlack pepper
1/4tsCumin
1/8cJalapeno peppers; chopped
1/4cTomato paste
2cChicken stock or broth
2tbCornstarch
2tbWater
1/2cGreat northern beans, canned
1/2cPinto beans, canned
1/2cBlack beans, canned
1/2cKidney beans, canned
8ozAngel hair pasta

In a 4-qt. saucepan, heat olive oil and add fresh vegetables. Saute until tender and add corn, tomatoes, and black olives. Add spices and cook a minute or two longer. Add jalapeno peppers, tomato paste, and chicken stock and bring to a boil. Add cornstarch mixed with 2 tbsp. water and cook an additional 5 mins., until thickened. Add beans and simmer until heated through.

Cook pasta in a separate pot. When cooked, drain well and serve 1 oz. of pasta w/1 cup of chili in the same bowl.
