Title: Nectarine Salad

Yield: 4 Servings

1lbNectarines, pitted & cubed
1/2cSweet Red Pepper, chopped
1/4cGreen Onions, thinly sliced
1/4cVegetable Oil(or LESS)
2tbLime Juice
1tbCider Vinegar
1/4tsSalt
1/8tsBlack Pepper, ground
  Leaf Lettuce

Combine nectarines, red pepper and onions in a small bowl. Whisk together oil, lime juice, wine vinegar, salt and pepper. Pour over nectarine mixture. Refrigerate. Mound on lettuce to serve.
